Once again kept is simple but added my own flare. With this recipe, I bought frozen pretzels and baked them in the oven but made the home made cheese sauce.
1/4 c unsalted butter
1/2 c all-purpose flour
1 c whole milk
1-2 cups dark German beer
1 c shredded sharp white cheddar
1 c shredded mild cheddar
Kosher salt, to taste
Fresh cracked pepper, to taste
Key thing...buy the blocks of cheese and shred them. When the cheese is shredded and bagged then its packed with preservatives and really loses its taste. I personally use my Kitchen Aid stand alone mixer with the attachments. Its a must have!
In a medium sauce pot on medium heat, melt together the butter and flour to make a roux.
Add in the milk and beer and whisk until it becomes very thick.
Whisk in the cheeses until it is smooth and season with salt and pepper. Love extra pepper
Serve warm with the pretzels.
